For the Dressing
- 1 tsp capers*
- 2 cloves garlic
- 1/4 tsp anchovy paste optional
- 1 tsp pepper freshly cracked
- 1 tbsp dijon mustard smooth
- 2 tbsp mayonnaise
- 1 egg yolk
- 1/2 cup olive oil
For the Salad
- 1 head romaine lettuce
- croutons optional
- parmesan cheese optional
- lemon wedges optional
Add the capers and garlic to a mixing bowl. Mash them together with a fork until a paste has formed. Mix in the anchovy paste, pepper, dijon, mayonnaise, and egg yolk.
While whisking vigorously, slowly pour the olive oil into the bowl. Continue to whisk until everything is well combined and silky.
Tear the lettuce into bite-sized pieces. Toss with the dressing and top with croutons and freshly shaved parmesan cheese. Serve with lemon wedges.
*Capers are a small bud, pickled in salt and vinegar. Their flavor is similar to mustard and black pepper.
The anchovies can be completely left out of this recipe.
You can leave the egg yolk out and use an extra tbsp of mayonnaise.
Make sure you use a classic mayonnaise and not a dressing style. The dressing style has a distinct flavor and additional sugar. It will take over the flavor of your caesar dressing.
